Here me out as I tell you more about this amazing recipe! You should know that I made this giant cookie for dessert tonight after dinner and it was gone within minutes of coming out of the air-fryer. I don’t think my kids even knew there were black beans in this cookie! They only knew that they loved it and couldn’t wait for me to make it again.
I love that they loved it because it is packed with nutrients they need to grow and stay satisfied.
The cookie comes together quickly in the air fryer, perfect to satisfy that sweet tooth after dinner. I noticed I needed to wet my hands a bit to shape it after putting it on the parchment paper to give it that cookie shape.

This recipe can be 100% gluten-free depending on the kind of rolled oats that you use.

Ingredients

  • 1/2 cup black beans, rinsed and drained
  • 1/3 cup rolled oats (use slightly more oats to help with structure)
  • 2 tbsp cocoa powder
  • 2 tbsp maple syrup (or sweetener of choice, adjust to taste)
  • 2 tbsp nut or seed butter (or 1 tbsp nut butter + 1 tbsp applesauce for moisture)
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • Pinch of salt
  • Optional: 2 tbsp dark chocolate chips

Instructions

  1. Blend the Dough: In a food processor, blend black beans, oats, cocoa powder, maple syrup, nut/seed butter, vanilla, baking powder, and salt until smooth. Stir in chocolate chips if using.
  2. Form Cookies: Scoop about 1 tablespoon of dough, roll into a ball, and flatten into a cookie shape.
  3. Preheat Air Fryer: Preheat the air fryer to 350°F (175°C) for 2-3 minutes.
  4. Cook: Place cookies in the air fryer basket lined with parchment paper. Air fry for 8-10 minutes or until firm.
  5. Cool: Let cookies cool for 5 minutes before removing.
