Simple Allergy-Friendly Turkey Meatballs

Ingredients

  • 1 lb ground turkey
  • 1/4 cup ground Rice Chex (or other gluten-free breadcrumbs)
  • Binder Option 1:
  • 1 tbsp ground flaxseed + 2.5 tbsp water (mix and let sit for 5 minutes to form a gel) OR
  • Binder Option 2:
  • 2 tbsp plain dairy-free yogurt (e.g., coconut or almond-based if tolerated)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried Italian herbs (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare your binder: If using flaxseed, mix 1 tbsp ground flaxseed with 2.5 tbsp water in a small bowl and let it sit for 5 minutes to thicken. If using dairy-free yogurt, measure out 2 tbsp and set aside.
  3. In a mixing bowl, combine all the ingredients, including your chosen binder, and mix until just combined (don’t overmix).
  4. Roll the mixture into small meatballs (about 1 to 1.5 inches) and arrange on the baking sheet.
  5. Bake for 15–20 minutes, or until fully cooked and golden brown (internal temperature of 165°F).
  6. Serve warm with your favorite sauce or side dish!

For some reason, meatballs have been a go-to meal of mine lately. I love how easy they can be to put together, how quick they can cook in the oven and how easy they are to meal prep!

I’ve been trying a few different varieties recently and feel like I hit the jackpot in making these! They are easy to customize to make gluten-free, egg-free and dairy-free.

I served these with the allergy-friendly white sauce I posted about recently over the gluten-free pasta and a side salad. It made for a filling and delicious meal!
