Chickpea Banana Muffins
These Chickpea Banana Muffins are a game-changer! They’re soft, naturally sweet, and packed with protein and fiber, all while being totally allergy-friendly. I was inspired to make these after making some amazing chickpea banana pancakes recently, but wanted to change things up a bit.
These are made without dairy, eggs, nuts, or gluten (if using certified GF oats), they’re the perfect snack for little ones and adults alike. My oldest is about 10 today, and my husband grabbed some on the way to church this morning, loved them! The chickpeas blend right in, keeping the muffins moist without any bean-y taste. Want to switch it up? Try mini muffins for bite-sized goodness or add chocolate chips for an extra treat.
Chickpea Banana Muffins
Ingredients (Makes 12 muffins):
1 can (15 oz) chickpeas, drained and rinsed (or 1 ½ cups cooked)
2 ripe bananas
½ cup oat yogurt (unsweetened or vanilla)
¼ cup maple syrup (or other liquid sweetener)
¼ cup neutral oil (or applesauce for oil-free)
1 tsp vanilla extract
1 cup oat flour
½ cup rolled oats (optional for texture)
1 tsp baking soda
½ tsp baking powder
½ tsp cinnamon
¼ tsp salt
½ cup dairy-free chocolate chips or raisins (optional)
Instructions:
Preheat oven to 350°F (175°C) and line a muffin tin with liners.
In a food processor or blender, blend chickpeas, bananas, oat yogurt, maple syrup, oil/applesauce, and vanilla until smooth.
In a mixing bowl, whisk oat flour, oats, baking soda, baking powder, cinnamon, and salt.
Pour the blended mixture into the dry ingredients and mix until just combined. If adding chocolate chips or raisins, fold them in.
Divide the batter evenly into the muffin cups.
Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
Let cool before enjoying!
Mini Muffin Adjustments:
Fill mini muffin cups about ¾ full (use a small cookie scoop for even portions).
Reduce baking time to 10-14 minutes—check at 10 minutes with a toothpick; they should be golden and firm on top.
Since mini muffins cook faster, keep an eye on them to prevent overbaking.
